Woah, this omelet was really flavorful! The bacon really packs a punch in this one and it is quite salty, I probably didn’t need to put any salt in the actual omelette! I based my recipe on the Simple Bacon and Cheese Omelet from http://www.thehungrymouse.com. It is interesting cooking the egg this way more of as a pancake then anything else. The texture has a little bit of crunch from the bacon and onion but is mostly soft and I had it with my toast. The taste was just another way of combining these ingredients but seemed very strong with the bacon and onion this way.
